Solterito de Quinoa Salad
What you’ll need

Quinoa
2 cups
Black Olives, minced
1/4 cup
Queso Fresco, cut into small cubes
1/4 cup
Kosher Salt
1 tsp
Tomato, small dice
1/3 cup
Corn, cooked, kernels removed
1 ear
Lime Juice
2 tbsp

Preparation:
1. In a pot, boil 4 cups of water.
2. Once water is boilng, add 2 cups dry quinoa.
3. Reduce heat to low, allow contents to simmer.
4. Cover pot with lid, and let cook for at least 20 mins until fully cooked with no remaining water in the pot.
5. Add all ingredients (except for lime juice and kosher salt) in a large bowl and mix well.
6. Add lime juice and mix well.
7. Add kosher salt and mix well.
8. Serve cold!
