Apple Ring Pancakes

Whole wheat flour or all-purpose flour
1 cup
Baking powder
1/2 teaspoon
Baking soda
1/4 teaspoon
Salt
1/4 teaspoon
Vanilla
1/2 teaspoon
Milk (dairy or non-dairy)
3/4 cup
Egg
1
Melted butter
2 tablespoons
Fresh apples
2
Butter or oil for frying
Maple syrup for serving

Time: 25 minutes

Preparation:

1. Combine in a large bowl dry ingredients: flour, baking powder, baking soda, and salt.

2. Whisk together in a medium bowl milk, egg, butter, and vanilla extract.

3. Pour wet ingredients into dry ingredients and mix to combine.

4. Heat up oil or butter in a frying pan.

5. One at a time, dip the apple slices into the batter and place in the hot pan. Allow the pancakes to cook until the edges start to look dry and then flip over, cooking on the other side until golden brown, about 3 minutes per side. Repeat for all apple slices.

6. Serve with maple syrup or enjoy plain!
