Asparagus Tacos

What you’ll need

Cooking Oil
1 Tbsp
Onion
1, diced
Roma Tomatoes
2, diced
Asparagus
1 bundle
Salt
1 tsp
Vegetable or Chicken Stock
1 cup
Refried Beans
1 can
Tortillas (for serving)
Lime (optional - for serving)

Instructions

Serves 4
Time: 30 minutes

Fried Dandelions

Preparation:

1. Pour oil into a pan and heat to medium. Add onion and sauté.

2. Add tomatoes and continue to sauté.

3. Cut asparagus into thirds or quarters and discard the end pieces that may be too tough to eat. Add cut asparagus to the pan with the other veggies and continue to sauté. Add salt.

4. Pour veggie stock over the vegetables. Stir and cover with a lid. Allow to cook for a a few minutes, until veggie stock has mostly been absorbed into the asparagus.

5. Once the asparagus is tender, remove from heat.

6. Make tacos using tortillas and refried beans. Squeeze fresh lime over top of tacos and enjoy!
