Broccoli and Apple Salad

What you’ll need

broccoli, cut into small florets
1 large head
red apple, cut into thin slices
1 medium
red onion, diced
1/4 large
sliced almonds
½ cup
mayonnaise
½ cup
plain whole milk yogurt
¼ cup
apple cider vinegar
2 Tbsp
sugar
3 tsp
salt
3/4 tsp
pepper
¼ tsp

Instructions

Serves 6
Time: 1 hour, 15 minutes

Preparation:

1.  Combine the broccoli, apple, cranberries, onion, and almonds in a large bowl.

2.  In a small bowl, whisk together the mayonnaise, yogurt, vinegar, sugar, salt, and pepper.

3.  Pour the dressing over the broccoli mixture and toss to combine.

4.  Refrigerate one hour before serving.

5. Note: You may not need all of the dressing. Start with about 3/4 of the dressing, taste, and go from there.
