Collard greens
1 pound
Garlic
4 cloves
Cooking Oil
2 Tsp
Salt and pepper
To taste

Cooking Matters

Preparation:

1. Remove hard stems from greens and wash greens in a large bowl with cold water. Repeat until leaves are free of dirt. Shake off any excess water.

2. Use a sharp knife to slice leaf rolls into ¼-inch wide strips.

3. Peel and mince garlic.

4. In a large skillet over medium-high heat, heat oil.

5. Add greens. If greens can't all fit in the pan at once, cook in two batches. Stir greens until wilted, about 1-2 minutes.

6. Reduce heat to medium. Add garlic. Cook until greens are soft and excess water is gone, about 5-7 minutes. If garlic starts to brown or burn, reduce heat to medium-low.

7. Season with salt and pepper. Serve right away.

8. Serve with rice, pasta, or a variety of bread like cornbread. Add cooked greens to other meals like tacos or sandwiches.
